The Antinori winery's Chianti Classico DOCG Riserva is a remarkable and potent creation, embodying sheer sublimity. Crafted through the harmonious fusion of 90% Sangiovese and 10% Cabernet grapes, this wine stands as a testament to excellence.
The vinification process begins with a meticulous destemming and gentle pressing of the grapes. The ensuing rapid alcoholic fermentation facilitates the development of a distinct and clear bouquet. Over a span of 12 days, the maceration process takes place, characterized by frequent pump overs that skillfully extract rich hues and velvety tannins. The fermentation temperature is meticulously controlled, capped at a maximum of 30°C.
Post-malolactic fermentation, an exquisite blend emerges, patiently maturing until spring. This maturation journey unfolds within barrels, where time works its magic.
